Our Story

Why The Bottle Poet?

Because the best stories are rarely found in books.

  • They’re written across tables.
  • Between friends.
  • During first dates.
  • Over celebrations.
  • Through difficult conversations.
  • Sometimes over a beautiful meal.
  • Often with a bottle shared.

At The Bottle Poet, wine isn’t the destination. It’s simply the invitation. The real poetry is found in the moments we create together.

The Bottle Poet is a new kind of wine bar coming to Rothesay — built around exceptional wines, thoughtful small plates and pairings, good conversation, and the belief that the best bottles are the ones that introduce you to something new.

The storyteller behind the bottle.

Every story has a storyteller. Ours just happens to cook.

The Poet is the heart behind The Bottle Poet — the one who believes the best meals are never just about what’s on the plate, but about the people gathered around it.

For him, cooking has never been about showing off. It’s about slowing people down. Creating moments where conversations linger a little longer, and another glass is poured because no one is quite ready to leave.

Every dish is prepared with intention. Every ingredient has a purpose. And the menu changes every week, drawing on flavour profiles from around the world.

The Bottle Poet isn’t built around a menu. It’s built around a philosophy.

The Bottle Poet is slowly stepping out of imagination and into the room on Gondola Point Road. One morning a wall was a blank page. By night, it was poetry — petal by petal, light by light.

Every seat has a story

  • Some will fall in love.
  • Some will say goodbye.
  • Some conversations will change everything.
  • Others will simply make an ordinary Thursday unforgettable.

    A line, a bottle, a glass, a pen — revealed one piece at a time, until they finally became one.

    Approved

    The Town of Rothesay and its Planning Advisory Committee officially approved The Bottle Poet Wine Bar. We raised a glass.

  3. III

    The room is changing

    One brushstroke, one light, one darkened wall at a time. A blank wall became poetry, petal by petal.

    The tables are being set. The glasses are waiting. Wine flights are almost ready to be shared — reservations open in the coming weeks.

We’re building our Front of House and Back of House teams. Experience is an asset, but we’re looking for more than what’s written on a résumé — great personalities, genuine hospitality, reliability, and people who are excited to learn.

What we’re looking for

  • Great personality and a positive, professional attitude
  • Passion and willingness to learn about wine
  • Available to work evenings and weekends
  • Restaurant or hospitality experience (an asset)
  • Responsible Beverage Certificate of Completion (an asset)
  • Food Handler Certificate (an asset)

You don’t need to be a wine expert, but you should have a passion for discovering wine, learning what’s in the glass, and creating an experience our guests will want to come back for.
